What’s on the Menu at This Summer’s Farm to Fork Dinners at Eden Hall

Stir fry with regionally grown vegetables. Chicken and ribs with BBQ sauce using maple from trees just across the street. Beets fresh from the harvest.

Those options and a whole lot more will be served every other Thursday this summer at the Farm to Fork dinner series at Chatham University’s Eden Hall Campus.

And for the first time, this year’s menu includes local and regional beers and wines to enjoy alongside your meal.

Hannah Dillon, a catering manager with Chatham’s food service partners Parkhurst Dining, does a lot of the work behind Farm to Fork. She says she’s looking forward to seeing guests check out this year’s exciting new menus.

Those menus include crowd pleasers like stir fry, which will be served June 12 with chicken and vegan options, though the star of the dish will likely be the vegetables that are grown at Eden Hall Farm and other regional farms. Last year, they had a chef sautéing right outside the Eden Hall barn.

Another fan favorite menu returns in July with barbeque chicken and ribs. Dillon says maple harvested from the trees at Eden Hall will be used to make a tangy BBQ sauce at that dinner.

But there are also some outside-the-box ideas that are going to be offered, like May 22’s “coffee and cream” menu. That dinner features coffee-crusted pork tenderloin, with coffee from La Prima Espresso Co., the Pittsburgh-based roaster—which may not be as crazy as it might sound.

“It’s not just ground coffee on a pork loin,” Dillon said. “There’s a lot of different spices in it.”

Additionally, side dishes like au gratin potatoes with cheese from the local Goat Rodeo Farm & Dairy, a cappuccino panna cotta dessert, and more.

Other Pennsylvania farms and vendors at Farm to Fork this year include Blue Goose Farm in Nicktown, Frankferd Farms in Saxonburg, Lettuce Ladies from Ambridge, and more.

Farm to Fork’s final dinner is scheduled for August 14. With a big tent, tables, music, board games, and a scenic setting, the series offers a unique opportunity for families and food connoisseurs alike to enjoy a delicious meal with regionally sourced ingredients.
